You won’t believe how easy it is to make a wheel of garlic baked brie! We make thin slivers in the brie, load them with garlic and then drizzle on a thyme honey butter sauce that makes this wheel of brie totally unforgettable!

It’s my two favorite things coming together to make one fantastic food baby.

I know we’ve all had a sweeter twist on baked brie. I mean, all you need to do is grab a jar of your favorite preserves (be it fig, apricot, or raspberry) and pile it high on top of a wheel of baked brie. But I wanted to make a version that was sweet and savory all at the same time, and if I could manage to put garlic into the mix, well, the better that would be!
So please welcome the most delicious herby garlic baked brie you’ve ever experienced.

Around the holidays, it can get a little chaotic if you’re hosting a party and plan on making all the food yourself. For times like these, I love making a simple holiday cheese board that can work for as little as two people and as many as 100! But don’t get me wrong, dips made in the slow cooker like mycaramelized onion hot diporspinach and artichoke, orjalapeño popper skillet dip, oven-bakedPhilly cheesesteak dip,5-minute creamy avocado dip, and the super simple just stir-itMexican corn dipare all great things you can put out during the holidays without breaking a sweat.

That’s all in addition to my garlic baked brie, though. I mean, this one is guaranteed to disappear in a flash – ours certainly did!

What is brie cheese?

Brie is a mostly mild-flavored cheese that can be paired with either sweet or savory toppings. It is best served at room temperature or heated through (and melted.) Baked Brie is an easy addition to any holiday table, as it’s basically effortless to customize with your favorite toppings.

What do you need to make herb garlic baked brie?

  • 1 wheel of brie
  • fresh garlic
  • fresh thyme leaves
  • olive oil
  • butter
  • honey
  • dash of cayenne

How much brie would I need per person for a party?

The most important thing to consider when you’re trying to decide how much brie you’ll need as an appetizer for a party is the number of appetizers you plan on serving. If garlic baked brie is your only appetizer, you will need about 8 ounces of brie for every 5-6 people. If you plan on serving a few appetizers along with your garlic baked brie, you can get about 8-9 servings out of that 8-ounce wheel of brie.

How to make the best garlic baked brie:

  1. Preheat the oven to 350ºF. Place the wheel of brie on a cutting board and using a paring knife,make 6-8 slits in the brie to tuck in thin slivers of garlic. If you would like, you can prep this up to a day in advance; it just deepens the flavor of the brie even more!Make sure to let the brie sit at room temperature for 30-45 minutes before baking.
  2. When ready to bake, Place the wheel of brie on a piece of parchment paper and place the parchment paper in an oven-proof baking dish that’s just slightly larger than the wheel of brie.Mince the remaining garlic, and combine it with the thyme, olive oil, butter, honey, and cayenne. Zap in the microwavejust long enough for the butter to melt, roughly 20-40 seconds. Stir to combine andpour the prepared one butter over the brie.
  3. Cover the baking dish with foil and place the baking dish in the oven tomelt the brie, about 15-18 minutes for an 8-ounce wheel, and 20-25 minutes for a 16-ounce wheel. Remove from the oven and press gently with a butter knife to check if the brie has melted. If it hasn’t softened, you can place it back in the oven for 2-3 additional minutes. When done, serve with crackers and fresh fruit.

Tips to make the best garlic baked brie:

  • If you are buying a wheel of brie, it’s important to consider the thickness of the brie. Generally, wheels of brie are sold in 1-inch thickness; sometimes, they are thicker. Keep in mind that if your brie is thicker, it will most definitely require a longer baking time
  • For the best wheel of baked brie, I suggest purchasing brie that is labeled ‘triple-cream brie.’ For an economical, yet tasty wheel, consider buying from Costco. A 16-ounce wheel of brie costs around $5, and it melted beautifully in the oven!
  • It’s essential to score the top rind of the brie to ensure even melting. This works out very naturally in our case because we’re not only scoring the brie but also inserting slivers of garlic into it!
  • Allow the brie to sit at room temperature for at least 30-45 minutes before baking it. This ensures that the brie melts evenly in the oven. Cold brie in a hot oven will definitely require additional baking time, and you also run the risk of over baking it.
  • Make sure you don’t overcook — or err over bake the brie once the cheese is over baked, it often solidifies and becomes hard, and that isn’t very appealing or appetizing.

I love how different this garlic baked brie is! It’s a little sweet a little savory, and I’m willing to bet that your dinner guests will be asking for the recipe!

Ingredients

  • 1 (8-16 ounce) wheel of brie
  • 2-4 fresh cloves garlic (see notes)
  • ½ teaspoon of fresh thyme leaves
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1-2 tablespoons honey
  • dash of cayenne
  • Prepared crostini, for serving

Instructions

  1. Preheat the oven to 350F.
  2. Place the brie in a small, ovenproof baking dish that is just slightly bigger than the wheel of brie. Using a paring knife, make 4 slivers out of two of the garlic cloves. Pierce the brie with the same paring knife and make slivers in the brie to fit the slivers of garlic in. Tuck the garlic slivers all the way into the brie. You could do this up to one day in advance if you are prepping for a get together; it flavors the brie even more!
  3. When ready to bake, mince or press the remaining clove of garlic into a microwave-safe bowl, along with the thyme, olive oil, butter, honey, and cayenne. Zap in the microwave just long enough for the butter to melt, roughly 20-40 seconds. Stir to combine and pour the prepared honey butter over the brie wheel. Cover the baking dish with a piece of foil and place in the oven for the brie to melt, about 15-18 minutes for an 8-ounce wheel and 20-25 minutes for a 16-ounce wheel. Remove from the oven around press gently (without piercing the brie) using a butter knife to check if the brie has melted on the inside. If it has not softened place back in the oven for 2-3 additional minutes. When done, serve immediately with crackers or crostini.

Notes

  • If you are making an 8-ounce wheel of brie, use 1 clove for slices and 1 clove for mincing. If you are using a 16-ounce wheel of brie, use 1 or 2 for slivers and 1-2 for mincing.

    Made this for a quick appetizer before going out for a birthday dinner with family. It was a HUGE hit! I did add extra cayenne because we love our spice. I was a bit worried the amount of garlics would overpower the cheese but it was a fabulous balance.
