Gumdrop Cookies– With red and green gumdrops, these cookies are perfect for Christmas! They can be adapted for any holiday though, and kids love ’em!

The Adoption Boutique that I held at my house this weekend was not as successful as I had hoped. I handed out 300 invitations, and had 11 people show up.

I’m not going to lie, that was pretty discouraging. Not because I have a room full of hair clips, vinyl lettering, and home decor left. But because I have a pile of pass along cards that I didn’t get to hand out. Cards that could have ended up in the hands of someone who could help us complete our family.

I’m just hoping that of the other 289 people, at least a few of them were made aware of our adoption plan, and that if they ever hear of a birth mother, they will remember our family. Because we know our prayers can only be answered if our birth mother can find us.

I am extremely grateful for the 11 friends that came, offered their support, and were willing to talk adoption. It meant the world to me!! Now that the Boutique is over, I can focus on other things. Like, um, Christmas. It’s coming up fast!

Christmas Gumdrop Cookies

We deliver homemade goodies to our neighbors, and I like to get an early start, so I will be doing a lot of baking this week. I love trying new recipes, and I’ve got at least a dozen bookmarked. I tried these gumdrop cookies several weeks ago, and we loved them.

The beaten egg whites make them a little different from most cookies, and I thought they were delicious. They are so festive with the red and green gumdrops, they made a perfect Christmas cookie. And of course they are a hit with the kids!

How to make gumdrop cookies:

  1. You start off by beating egg whites till soft peaks form, then beat in 1/4 cup of sugar. Set the mixture aside. You won’t use the yolks for these cookies, so you can use them for another recipe.
  2. In a large mixing bowl, cream butter and another 3/4 cup of sugar. Beat in the extract of your choice. Then stir in the dry ingredients and chopped gumdrops.
  3. Drop dough by spoonfuls onto silpat or parchment lined cookie sheets and bake at 350° for about 10 minutes.

Tip for cutting gumdrops:

To make cutting the gumdrops a little easier, dip your knife in hot water often. Or cut them with kitchen shears and dip those in hot water.

Handy supplies for making gumdrop cookies:

Silpat liners – the gumdrops tend to stick to the cookie sheet, so silicone liners are so handy! You can also use parchment paper if you prefer.

Kitchen shears – I like cutting my gumdrops with kitchen shears, I think it’s easier.

Hand mixer – Makes whipping up those egg whites a breeze. I have this one and it’s a powerhorse.

Gumdrop Cookies

Chewy cookies filled with chopped up gumdrops. A fun Christmas cookie recipe!

Ingredients

  • 2 egg whites
  • 1/4 cup sugar
  • 3/4 cup butter
  • 3/4 cup sugar
  • 1 tsp vanilla or almond extract (I love using almond)
  • 1 3/4 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chopped fruit gumdrops

Instructions

  1. Beat egg whites till soft peaks form. Gradually add 1/4 cup sugar and beat till stiff peaks form. Set aside.
  2. In large bowl, cream butter and 3/4 cup sugar. Beat in vanilla. Stir in dry ingredients and gumdrops. (Mixture will be very dry.) Gently stir in the beaten egg whites.
  3. Drop dough by spoonfuls onto silpat or parchment lined cookie sheets. Bake at 350° for about 10 minutes. Cool for 2 minutes before removing to cooling racks.
