cucumber Radish salad-
Sliced cucumbers with tomatoes, red onion (or sweet onion) and radishes with the classic Ukrainian mayo and sour cream as the dressing topped with fresh dill. This salad is our absolute favorite and is the salad we make most during the summer months.
okay…
This recipe brings back so many fond memories from my childhood. We immigrated to the US in 1990 and growing up, my parents had a huge garden with every possible vegetable growing. We lived in a small village in Ukraine (by small I mean the outhouse was a great distance away and there were no restaurants or stores in the village). They had acres of produce they grew then harvested and stored for winter usage. In smaller villages like ours, whatever you grew, you would then enjoy during the cold winters and whatever you didn’t have, you most often just went without.
As far back as I can remember this salad was special. It was the classic veggies everyone always planted. There was just something about making this quick salad and feeding men after a hard day of work and the kiddos after they’d been bathed from a day of outdoor fun. These memories bring such a smile to my face.
Ha, how’s that for a description? Bet you’ll never look at a tomato and cucumber salad the same again. 🙂
how to make a Radish salad-
A salad recipe doesn’t get any simpler than this one, however, there are a few things to keep in mind. Keeping the cucumbers and tomatoes cut the same size really does help in the salad, it’s best to use a mandoline slicer if you want to keep the vegetables thin and uniform. Everything can also be cut into thick chunks if that is your personal preference.
If prepping the salad ahead of time, don’t mix the salad with the dressing. Just cut all of the ingredients, mix and add the dressing before serving.
Enjoy this traditional cucumber salad with tomatoes! Though it is best during the summer when the vegetables are freshly harvested, the salad can easily be made all year round.

No. On Pinterest I clicked on a cabbage cucumber radish salad and it brought me to this. She is right.

I’m sorry for the confusion, B. There must have been the wrong URL entered in Pinterest.
