Actually, after a whole lotta crustless pie and this creamy sauteed brussel sprouts salad sounds like the perfect way to round out the week, don’t you think? Plus have I mentioned that creamy sauces make me swoon?

But before I dive into this Brussel Sprouts dish, here’s a little secret …err confession. I am re-sharing (and upgrading) this Creamy Mustard Sauteed Brussels Sprouts Salad today. It’s an oldie but goodie that needed love. It’s a great vegan side salad/dish for Thanksgiving and all the holidays coming up.

Think of this dish as fall salad meets a hot superfood salad and then they made out together in a vegan mustard sauce pool! Sorry, did I just totally ruin the moment for you? Okay, so where was I? Ahh yes, trying to be professional and talk health perks.

In all seriousness, thiscreamy mustard brussels sprout dish, is hearty yet healthy. And yes, I am talking about a vegetarian side dish. It’s Paleo and Vegan friendly and such a POWERHOUSE veggie dish. Especially for those who are needing to reboot their immune system (like in my case) with an extra dose of antioxidants Vitamin K.

Creamy Mustard Sauteed Brussel Sprouts Salad – Nutrition facts!

  • Brussel Sprouts contain over 25o% of Vitamin K1. Vitamin K is crucial for bone health, reducing inflammation in the body, and preventing blood clots.
  • Vitamin K is a fat soluble vitamin, which is why pairing these these sauteed Brussel sprouts in a mustardy cashew cream sauce is key for absorption! You need the healthy fatsto absorbmore nutrients.

Sauteed Brussels Sprouts Salad with Creamy Mustard Sauce (Vegan, Paleo)

Ingredients

Units Scale

For the Creamy Mustard Sauce

  • ½ cup real mayo or hummus (adjust to desired thickness)
  • ¼ cup dijon mustard
  • ½ teaspoon onion powder
  • ¼½ teaspoon sweet paprika
  • 1 teaspoon lemon juice
  • Optional: ¼ teaspoon ground mustard
  • ¼ cup olive oil
  • Optional: 1 teaspoon dried herbs (chives, parsley, dill, etc.)
  • 12 Tablespoons honey or agave nectar
  • Kosher salt to taste
  • Pepper to taste

For the Sautéed Brussel Sprouts

  • 45 cups Brussels sprouts (quartered or sliced in half)
  • 1 shallot (sliced) or ⅓ cup red onion slices
  • 1 Tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • Sea salt to taste
  • Pepper to taste
  • Optional cranberries and fresh herbs to garnish

Instructions

For the Creamy Mustard Sauce

  1. In a small mixing bowl or food processor, combine creamy mustard sauce ingredients.
  2. Mix until creamy. Adjust thickness as desired by adding additional oil or vegetable broth. Season to taste.

For the Sauteed Brussels Sprouts Salad:

  1. Prepare/wash the Brussels sprouts by removing the stems and slicing in half or quarters.
  2. Add 1 Tablespoon of olive to a large skillet or fry pan. Heat the pan over medium heat until olive oil sizzles.
  3. Add the Brussels sprouts and sliced onion. Sauté on medium to medium-high heat for 7-10 minutes or until Brussels sprouts start are tender and crispy brown on the edges.
  4. Add the balsamic vinegar, and sauté for an additional 1-2 minutes to help caramelize the Brussels sprouts.
  5. Turn heat to medium-low and mix in ⅔ – ¾ cup of the creamy mustard sauce. Mix to combine. (Save the extra sauce for other usage or for reheating dish later).
  6. Season with ¼ teaspoon black pepper and sea salt each. Cook for another 3-5 minutes on medium to medium low heat until Brussels sprouts and onion are creamy and cooked.
  7. Remove from heat. Plate or serve in a bowl. Garnish with cranberries and fresh herbs.
  8. Serve immediately or store in the fridge, covered/sealed. Serve hot or cold!

Notes
