Ingredients you need for the Slow Cooker Vegetable Soup

1 yellow onion, chopped2 carrots, peeled and chopped2 celery stalks, rinsed and chopped3 cloves garlic, minced4 cups (1l) low-sodiumvegetable broth, or more2 (14 oz) cans diced tomatoes,undrained3 medium potatoes, peeled and diced1 cup of green beans, chopped2 bay leaves1/2 teaspoon dried thyme1/2 teaspoon salt and freshly ground black pepper1 1/4 cups frozen or fresh corn kernels1/3 cup chopped fresh parsley

Directions

1. To make the vegetable soup: Heat olive oil in a skillet over medium-high heat. Add onions, carrots, and celery; cook for 4 minutes. Stir in garlic and cook for 30 seconds, until fragrant. Remove from heat and transfer to your slow cooker.

2. In the slow cooker, add diced tomatoes, diced potatoes, and green beans.

3.Cover with vegetable broth, add salt, pepper, thyme, and bay leaves.

4. Cover and set the slow cooker to high for 4 hours or low for 6 to 8 hours – Adding more liquid if necessary.

5. Add corn for the last hour of cooking. Adjust seasoning with salt and pepper. Remove the bay leaves, sprinkle the slow cookervegetable soup with fresh chopped parsley, and serve immediately. Enjoy! ❤️
